Sauceless Mozzarella, Caramelized Onion, and Kale Pizza

Mamma mia this is the best pizza I have ever made! My husband is a serious fan. The caramelized onion just adds that certain pizazz and the kale chips on top give a very satisfying crunchiness to the whole pie.

I experiment with this pie every time I make it. Sometimes I add garlic, sometimes I add red bell pepper, and I have future plans to try adding a better mix of cheeses and spices. I never use sauce for it. I hate opening a jarred sauce and only using half of it and then letting the rest go to waste. And I’m not very good at making my own sauce yet, but you know what? You don’t need sauce on pizza. Shocking right? Not that sauce would hurt though…

P.S. It’s actually pretty quick to put together, you can prep all these ingredients beforehand and toss it all together for dinner since it only takes 10 minutes to bake.

*Other good additions are fresh basil leaves, olives, swiss cheese, and sun-dried tomatoes.
